CARROT CAKE

When friends come over, I typically ask them to send me a list of things they’ve been craving or have them look through my blog and let me know what they would like to try. When my friend came over and asked me to make carrot cake, I was SO happy because to me, its the best fall dessert. A moist and heavenly cake with layers of shredded carrots, warm spices and nutty walnuts in every bite. YUM!

CARROT CAKE

A moist and heavenly cake with delicious layers of shredded carrots, warm spices and walnuts in every bite.

Ingredients

For the Cake
  • 2 cups all-purpose flour, sifted
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/4 tsp ground cloves
  • 1/2 cup granulated sugar
  • 3/4 cup light brown sugar
  • 3/4 vegetable oil
  • 1/4 tsp 2% Faye greek yogurt
  • 4 eggs
  • 1 tbsp vanilla extract
  • 3 cups shredded carrots 
  • 1 cup walnuts, chopped
For the Frosting
  • 16 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tbsp vanilla extract
  • 1/4 cup coarsely chopped walnuts, for garnish

Instructions

For the Cake
  1. Preheat the oven to 350F.  Grease two 9 inch cake pans and set aside.
  2. In a medium bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, salt and cloves.  
  3. In a stand mixer with the paddle attachment, mix together the sugars, vegetable oil, eggs, greek yogurt and vanilla extract for 2 minutes until well incorporated.  Add the shredded carrots and walnuts and combine.  Fold in the dry ingredients.  Divide the batter evenly between 2 cake pans and bake in the oven for 25-30 minutes.  Once the toothpick comes out clean, then remove from the oven.
  4. Cool the cake for 10 minutes then invert the cake onto a parchment paper on cooling rack until completely cool.
For the Frosting
  1. In a stand mixer with a paddle attachment, cream together the cream cheese and butter until smooth.  Add the powdered sugar and vanilla extract and mix on medium speed for 1 minute until well combined.
