SHRIMP VEGGIE LO MEIN

Easy weeknight dinners that is super satisfying is what i’ve been striving to make lately. I love this recipe for two reasons:

  1. Noodles and carbs are my best friend.

  2. This dish uses up all the veggies that need to be consumed in your fridge. You can legit add as many veggies as possible. I didn’t have shiitake mushrooms but if you have some, add it because mushrooms are a great addition to this dish. Really soaks up all the flavors.

A few notes:

If you are spice lover like me, I would recommend using good chili oil in the sauce. My go to is ZinDrew garlicky chili oil that is so flavorful with a kick.

When cooking the veggies, make sure they still have crunch and they are not soggy. Its great to have that crunchy texture from the veggies while the noodles are soft.

SHRIMP VEGGIE LO MEIN

Ingredients

  • 1 lb shrimp, cleaned and deveined
  • 2 bunch of lo main noodles
  • 1 tbsp vegetable oil
  • 1 tbsp rice wine 
  • 1 carrot, peeled 
  • 2 celery stalks, chopped
  • 1 cup broccoli 
  • 1/2 red bell pepper, sliced 
  • 3 garlic cloves, minced 
For the Sauce

Instructions

  1. Clean and devein the shrimp and season with salt & pepper. Set aside. Wash and cut the veggies.
  2. In a small bowl, whisk together the sauce ingredients.
  3. In a medium sauce pan, bring water to a boil for the noodles. Add the noodles to the boiling water and follow package instructions.
  4. Meanwhile, on medium heat add 1 tbsp vegetable oil to a frying pan and cook the shrimp for about 2 minutes until it turns pink. Transfer to a bowl and set aside.  Drain the noodles and set aside.
  5. Add rice wine to help deglaze the pan then add the carrots, broccoli, bell pepper and celery and cook for 3-5 minutes until the veggies are sautéed but not too soft.  Transfer noodles to the pan and add the sauce and shrimp then combine until the sauce is well incorporated.  Split into bowls and enjoy!
