LAMB STUFFED ACORN SQUASH

Ingredients

  • 1 lb organic ground lamb
  • 2 tbsp olive oil 
  • 1 tsp salt & pepper
  • 1/2 onion, chopped
  • 1 cup shitake mushrooms, chopped
  • 1 serrano pepper, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp ground cumin
  • 2 tbsp parsley, chopped (plus more for garnish)
  • 1 tbsp harissa paste
  • 1/4 cup beef broth
  • salt & pepper to taste
  • 1 tbsp panko bread crumbs
  • 2 tbsp grated parmesan cheese

Instructions

  1. Preheat the oven to 375F.
  2. Prep the squash: Using a sharp, carefully cut the tip and stem of the acorn squash then cut in half. Using a spoon, scrape out the all of the seeds and stringy fiber pieces.
  3. Place the acorn squash halves, cut side up onto a baking pan. Brush the olive oil over the cut parts of the squash.Season with salt and pepper.  Place in the oven for 45-50 minutes until soft and tender. 
  4. Meanwhile, prep the stuffing.  In a medium bowl, mix together parsley, garlic powder, onion powder and ground cumin and set aside to marinate.  
  5. Chop the onions, shiitake mushrooms, Serrano peppers and mince the garlic.  Heat 2 tsp olive oil in a medium cast iron over medium heat.  Add the onions, mushrooms, Serrano peppers and garlic until softened then add the lamb mixture.  Season with salt and pepper.  Once cooked through, add harissa paste and beef broth and allow it to simmer until most of the liquid has evaporated.  
  6. Remove acorn squash from the oven and cut out some of the flesh.  Add the flesh with the lamb mixture.  Place the stuffing mixture into the acorn bowls and sprinkle with panko bread crumbs and parmesan cheese.  Place back in the oven for 15 minutes until the cheese has melted and bread crumbs have browned.  
  7. Place on a plate and enjoy while it's warm.  Enjoy!
