Buddha Bowl

What is a buddha bowl? A colorful and delicious meal served up in a big bowl of awesome! These light bowls are giving me life this summer. As temperatures are on the rise, all I really want is a satisfying meal without feeling heavy. Especially when drizzled with a spicy jalapeño sauce from Holic Foods.

Ingredients

• 1 tbsp olive oil
• 1 cup quinoa 
• 2 cups chicken or vegetable broth
• 2 cups arugula
• 2 cups heirloom cherry tomatoes, quartered
• 2 cucumbers, diced 
• 1/4 cup crumbled feta
• 1/4 cup kalamata olives 
• 2 tbsp Holic spicy jalapeno sauce

Instructions

1. Pour olive oil in a saucepan over medium-high heat. Then add the quinoa and combine for 1 minute.  Pour in the chicken or vegetable broth and bring to boil.  Turn the temp to low heat, cover and allow it to simmer until the broth is evaporated.  
2. Wash and prep the veggies.  
3. Transfer the quinoa to a bowl and add arugula, heirloom cherry tomatoes, cucumbers, olives, feta then drizzle with Holic spicy jalapeno sauce.Enjoy!
