LEMON ORZO WITH ROASTED ZUCCHINI

A lemony and salty orzo salad with nutty roasted zucchini and juicy ripe heirloom tomatoes. An easy weekend or potluck dish that everyone will enjoy.

Ingredients

• 1 1/2 cup orzo 
• 1 lemon, juiced (1/2 cup) and zested
• 1/4 cup + 2 tbsp olive oil 
• 1 1/2 tsp kosher salt, divided
• 1/2 tsp black pepper, divided
• 1 zucchini, sliced
• 1 cup heirloom cherry tomatoes, halved 
• 2 tbsp flat-leaf parsley, roughly chopped
• 1/4 cup crumbled feta cheese 

Instructions

1. Preheat the oven to 375F.  Wash and slice the zucchini then transfer to a baking sheet.  Drizzle with 1 tbsp of olive oil and 1/2 tsp salt and 1/4 tsp of black pepper.  Place in the oven for15 mins until soft and lightly browned.  
2. Meanwhile, bring alarge pot of pasta water to boil.  Pour in 1 tbsp olive oil and a big pinch of salt.  Throw in orzo and cook until al dente about 10 minutes.  
3. While the pasta is cooking, wash and cut the heirloom cherry tomatoes in half and roughly chop the parsley.  Zest one lemon and pour into a measuring cup, then cut the lemon in half and juice using a juicer.  Add olive and salt & pepper.  Whisk everything together. 
4. Strain the orzo then transfer into a medium bowl.  Pour the lemon liquid over the orzo and combine while it's hot to absorb the liquid.  Add the roasted zucchini, parsley and halved heirloom cherry tomatoes then combine.  Top with crumbled feta cheese and enjoy!
