FAVA BEAN DIP

Fava beans are in peak season. Perfect for making a delicious and creamy dip to snack on with chips, veggies, or pita wedges. Great for any party or to serve during Mother’s Day.

So easy to make, so lets get started:

Bring a medium pot of salted water to a boil. Add shelled fava beans and cook until tender, about 4 minutes. Meanwhile, prepare an Ice bath.  Use a slotted spoon to transfer to an ice bath until cool  - about 30 seconds. Drain and squeeze beans from the skin.

Add the beans, tahini sauce, olive oil, greek yogurt, lemon zest and juice, garlic, cumin and salt to the food processor and process until very smooth, adding 1 to 2 tablespoons water, if necessary.

Transfer the dip into a serving bowl and garnish with fava beans and red chili flakes. Serve with vegetables and enjoy!
