SUN DRIED TOMATO PESTO PASTA SALAD

Pesto pasta salad is the perfect way to make an easy and delicious side dish or it can be a main dish. The secret recipe for this dish is my homemade sun-dried tomato pesto. The deep flavor from allowing the sun dried tomatoes sauté in a pan with olive oil, crushed garlic, walnuts with oregano and chili flakes make ALL the different. Check out the recipe here.

The sun-dried tomato pesto gets into every nook & cranny of the fusilli pasta, the freshness from the mozzarella and basil along with the saltiness from the olives plus the crunch from the pine nuts is texture heaven! So simple yet incredibly delicious. Makes a perfect weekday or weekend lunch in any season!

SUN DRIED TOMATO PESTO PASTA SALAD

Ingredients

• 1 lb dececco fusilli pasta
• 1 tbsp olive oil
• 1 tbsp kosher salt
• 1 cup sun-dried tomato pesto
• 1/3 cup sun-dried tomatoes, diced
• 1/3 cup mozzarella balls, cubed
• 1/4 cup pine nuts
• 1/2 cup green olives, halved 
• 1/4 cup freshly grated parmesan 
• 2 tbsp ripped basil leaves

Instructions

1. Bring a large pot of water to boil.  Add salt and a splash of olive oil.  Pour in the fusilli pasta and cook until al dente.  
2. Meanwhile, prep and dice the ingredients (sun-dried tomatoes, mozzarella, ripped basil leaves, and olives).  
3. Drain the cooked pasta and pour it into a large bowl.  Add and combine the sun-dried tomato pesto while the pasta is hot.  Add the remaining ingredients - sun-dried tomatoes, mozzarella, olives, ripped basil leaves, pine nuts, and top with grated parmesan.  Combine everything with a large wooden spoon.   Transfer a few spoonfuls into a bowl and enjoy!
